Memphis BBQ typically means pulled pork shoulder coated in a sweet tomato-based sauce. North Carolina smokes a pig in a vinegar-based sauce. Those in Kansas City eat ribs cooked in a dry rub and Texans enjoy mesquite grilled “cowboy” brisket.
